And I have no experience in this bread baking thing. I'm still getting used to working with the dough, getting it to shape into balls, etc. But, for those who feel intimidated, I find it's very forgiving. Sometimes the dough that I put into the hot dutch oven did not hold together great, but still rose up into a good, very tasty loaf. He recommends keeping it at room temp and feeding it every day. After I'm sure it's good and active, I'll probably refrigerate it and feed it just once a week, before I bake.<br />I think that he does explain somewhere why you use so little starter to make the leaven, but I don't remember where it was or why.
