It was nice and chewy without it, but I'll try it next time I make this recipe. I also think I'll just try the regular struan recipe next time, not the "extraordinaire," to compare. Sadly, we ate the entire loaf before I had a chance to try a grilled sandwich. Anyway, I'm one of the struan lovers and want to encourage you (if you didn't do it already) to make the bread using the cooked brown rice. It adds a nice chewiness to the bread and is worth cooking some rice just because you want it for this bread.
